The best thing I ever cooked

If you don’t like lamb, I don’t even know what to say to you. I don’t even know who you are.

Lamb is a delicious meat. I particularly like ground hamburger lamb. Scrumptious!

Buy local if you can. You know, just because. If you can’t buy local then you definitely want New Zealand lamb. Don’t get Australian lamb, it’s old and tastes like mutton.

Form the ground lamb into patties. Cook on medium heat in your favorite skillet. Add salt and pepper and garlic to taste.

When the patties are done, remove from pan. Add some of your favorite red wine to the leftover fat and crispy bits. Pour over the patties.

For bonus points add some deli mustard, pickles, and slices of fine Irish cheddar (like Kerrygold). If you really want to turn it up to 11, add some slices of pastured bacon.

This. This is the best thing I’ve ever cooked. Lamb is rapidly becoming my favorite meat.

Miriam's Pineapple-Chicken

Start with:

1 humongous can of diced pineapple chunks in heavy syrup
1 whole chicken
1 bag of sweet onions

Dice the pineapple into small chunks, slice up the sweet onions, and quarter the bird.

Combine all ingredients into a large pot and cook on medium heat, uncovered, until the meat falls off the bone.

It may seem like a lot onions, but don’t worry. The onions will shrink down as the water in their flesh evaporates. You can never have enough onions in this dish.

The pineapple juice will combine with the chicken juices for an almost syrupy consistency. The sweet onions will shrink down and combine with the syrupy juice for awesome goodness.

Serve on a bed of sticky rice. Top with lots of black pepper.
